These Cookies Don't Crumble - Chewy Blackstraps

Here's another post that my family created- how great are they?

There's nothing better on a cold, rainy, fall day than warm cookies and hot spiced cider. So, I decided to make Chewy Blackstraps.
Start by creaming the brown sugar, white sugar, and butter together.
Next add the eggs, mixing thoroughly. Then mix in the molasses, vegetable oil, flour, baking soda, cinnamon, ground ginger, ground allspice, and salt.

After thoroughly mixing all of the ingredients, wrap dough in parchment paper or waxed paper, or place in a bowl in the refrigerator for at least 1 hour.
After the dough is chilled, roll it into balls.
Then roll each dough ball in sugar and place it on a greased cookie sheet.
Bake in a 325 degree oven for 13-14 minutes.
Mmmm, warm molasses cookies and hot spiced cider!
I usually make a double batch so that I can freeze a batch for later or package the extra cookies for gifts.
Chewy Blackstraps

Ingredients:
1 stick butter- softened to room temperature
1 C packed brown sugar
1/2 C granulated sugar
2 large eggs
1/2 C molasses
2 T vegetable oil
3 1/2 C all-purpose flour
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. ground allspice
1/2 tsp. salt

After taking the cookies out of the oven, let them cool completely before taking the cookies off of the cookie sheet. These cookies are crispy on the edges and chewy in the middle. Makes about 3 dozen. Enjoy!
Have a wonderful day!
